Preparation of Oysters

Clean the Oysters
Rinse the fresh oysters under cold running water to remove any sand or grit. Use a brush if necessary to clean the shells thoroughly.

Prepare the Breading
In a shallow bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Oysters
Carefully place the coated oysters in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown, turning once.

Drain and Serve
Remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
