Oysters

Method

Preparation of Oysters

  1. 1

    Clean the Oysters

Rinse the fresh oysters under cold running water to remove any sand or grit. Use a brush if necessary to clean the shells thoroughly.

  2. 2

    Prepare the Breading

In a shallow bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Prepare the Egg Mixture

In a separate bowl, whisk together the egg and milk until well combined.

Frying the Oysters

  1. 4

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  2. 5

    Coat the Oysters

Dip each oyster into the egg mixture, allowing excess to drip off, then dredge in the flour-cornmeal mixture until fully coated.

  3. 6

    Fry the Oysters

Carefully place the coated oysters in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown, turning once.

  4. 7

    Drain and Serve

Remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve immediately.

Preparing the Sauce

  1. 8

    Mix the Sauce

In a small bowl, combine the ketchup, horseradish, lemon juice, and Worcestershire sauce. Stir until well mixed.
