Preparation

  1. 1

    Chop the Cabbage

Remove the outer leaves of the green cabbage and red cabbage. Cut the cabbages in half, remove the core, and finely chop or shred them into thin strips. You should have about 4 cups of green cabbage and 2 cups of red cabbage.

  2. 2

    Grate the Carrot

Peel the carrot and use a grater or food processor to shred it into fine pieces. Set aside.

  3. 3

    Chop the Bell Pepper

Remove the seeds and stem from the green bell pepper. Chop it into small pieces or thin strips.

Making the Dressing

  1. 4

    Combine Dressing Ingredients

In a large bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well until smooth.

Combining Ingredients

  1. 5

    Mix Vegetables with Dressing

Add the chopped green cabbage, red cabbage, grated carrot, and chopped green bell pepper to the bowl with the dressing. Toss everything together until the vegetables are well-coated with the dressing.

  2. 6

    Chill the Slaw

Cover the bowl with plastic wrap or a lid and refrigerate the cole slaw for at least 30 minutes before serving. This allows the flavors to meld.
