Preparation of Potatoes

    Boil the Potatoes

    Peel and chop the Yukon Gold potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Mash them until smooth and season with additional salt if needed.

Assembly of Flautas

    Fill the Tortillas

    Warm the corn tortillas in a skillet to make them pliable. Place a spoonful of mashed potatoes in the center of each tortilla and roll tightly.

    Fry the Flautas

    In a large skillet, heat the vegetable oil over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Serving

    Plate and Garnish

    Serve the flautas topped with chopped chilies, diced red onion, shredded cabbage, avocado crema, queso fresco, and tomatillo salsa. Squeeze lime over the top before serving.
