Prepare the Beef Cheek

Cook the Beef

In a large pot, combine beef cheek, chopped onion, minced garlic, beef broth, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 3 hours until the beef is tender.

Shred the Beef

Remove beef from the pot and let it cool slightly. Shred the beef with two forks and set aside.

Prepare the Tostada Base

Fry the Tortillas

In a frying pan, heat vegetable oil over medium heat. Fry corn tortillas one at a time until golden and crispy, about 1-2 minutes per side. Drain on paper towels.

Assemble the Tostadas

Top the Tostadas

On each crispy tortilla, layer shredded beef cheek, followed by shredded cabbage, crumbled queso fresco, slices of avocado, and hot pickled vegetables.

Garnish

Squeeze fresh lime juice over the top and sprinkle with chopped cilantro before serving.
