Preparation

    Grilling the Corn

    Preheat your grill to medium-high heat. Remove the husks and silk from the corn. Grill the corn for about 10-15 minutes, turning occasionally, until the kernels are tender and charred in spots. Remove from the grill and let cool slightly.

    Making Cilantro Aioli

    In a bowl, combine mayonnaise, chopped cilantro, minced garlic, and lime juice. Mix well and set aside.

    Preparing Chili Lime Salt

    In a small bowl, combine chili powder, lime zest, and salt. Mix well and set aside.

    Making Mexican Crema

    In a bowl, mix sour cream with lime juice until smooth. Set aside.

Assembly

    Combining Salad Ingredients

    Once the corn has cooled, cut the kernels off the cob and place them in a large bowl. Add queso fresco, cotija cheese, chopped cilantro, chili powder, lime juice, and salt. Toss to combine.

    Serve the corn salad in bowls. Drizzle with cilantro aioli, sprinkle with chili lime salt, and add a dollop of Mexican crema on top.
