Preparation of Hummus

Prepare the Ingredients
Drain and rinse the canned chickpeas under cold water. If using jarred roasted red peppers, drain them as well.

Blend the Hummus
In a food processor, combine the chickpeas, roasted red peppers, tahini, garlic cloves, lemon juice, olive oil, ground cumin, salt, and black pepper.

Process Until Smooth
Blend the mixture until it is smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, add a tablespoon of water at a time until you reach your desired consistency.

Taste and Adjust
Taste the hummus and adjust the seasoning with more salt, pepper, or lemon juice if needed. Blend again to incorporate any additional ingredients.

Prepare the Pita and Veggies
While the hummus is blending, warm the pita bread in the oven or on a skillet until warm and soft. Cut the assorted vegetables into sticks or bite-size pieces for dipping.

Transfer the hummus to a serving bowl, drizzle with a little olive oil on top, and serve with warm pita and the vegetable crudité.
