Prepare the Chicken

Marinate the Chicken
In a bowl, combine 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder. Add the chicken breasts and coat them well. Allow to marinate for at least 30 minutes.

Grill the Chicken
Preheat your grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Assemble the Salad
In a large bowl, add 4 cups of mixed greens and 1 cup of halved cherry tomatoes. Toss gently to combine.
Make the Vinaigrette

Combine Ingredients
In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and black pepper to taste.
Combine and Serve

Finish the Salad
Slice the grilled chicken and arrange it on top of the mixed greens and tomatoes. Drizzle the vinaigrette over the salad just before serving. Toss gently to combine.
