Steak Preparation

    Season the Steak

    Take the ribeye steak and pat it dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Pan

    In a large skillet or frying pan, heat the olive oil over medium-high heat until it's shimmering.

    Cook the Steak

    Add the seasoned ribeye steak to the hot pan. Cook for 4-5 minutes on one side without moving it.

    Add Butter and Aromatics

    Flip the steak and add butter, crushed garlic cloves, and a sprig of rosemary or thyme to the pan. Baste the steak with the melted butter using a spoon.

    Check Doneness

    Cook for an additional 4-5 minutes for medium-rare, or until your desired doneness is reached. Use a meat thermometer for accuracy (130°F for medium-rare).

    Rest the Steak

    Remove the steak from the pan and let it rest for 5-10 minutes before slicing.

Fries Preparation

    Prepare the Potatoes

    Peel the large potatoes and cut them into even sticks (about 1/4 inch thick). Soak in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes - First Fry

    Drain and dry the potatoes. Fry them in batches for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

    Fry the Potatoes - Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for about 3-4 minutes until they are golden brown and crispy. Drain on paper towels.

    Season the Fries

    Sprinkle with salt while still hot and toss to coat.
