Method

Preparing the Grilled Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, lemon juice, minced garlic, Dijon mustard, salt, black pepper, and chopped dill. Place the salmon fillets in the marinade and let sit for at least 30 minutes in the refrigerator.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

Making the Garlic Mashed Potatoes

  1. 3

    Boil the Potatoes

In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender.

  2. 4

    Mash the Potatoes

Once the potatoes are cooked, drain them and return them to the pot. Add butter, minced garlic, milk, salt, and black pepper. Mash until smooth and creamy.

Preparing the Seasonal Vegetables

  1. 5

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add the sliced zucchini, bell pepper, and carrots. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.
