Calamari Preparation

    Clean the Squid

    Begin by cleaning the fresh squid. Remove the head and tentacles, and pull out the innards. Rinse the body and tentacles thoroughly under cold water. Pat dry with paper towels.

    Slice the Squid

    Cut the squid bodies into rings about 1/2 inch thick. Keep the tentacles intact.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper until well combined.

    Coat the Squid

    Add the squid rings and tentacles to the bowl of breading. Toss until all pieces are evenly coated.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

    Fry the Squid

    Carefully add a handful of the coated squid to the hot oil. Fry in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Aioli Preparation

    Mix Ingredients

    In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until smooth and well combined.

    Serve

    Transfer the aioli to a serving bowl and refrigerate until ready to serve with the fried calamari.
