Preparation of Ingredients

    Cook the Rice

    In a pot, bring 4 cups of water to a boil. Add 2 cups of rice and a pinch of salt. Reduce heat, cover, and simmer for about 15-20 minutes until the rice is tender. Fluff with a fork and set aside.

    Prepare Protein

    Choose your preferred protein option (grilled chicken, ground beef, or tofu). For chicken or beef, grill or sauté until fully cooked. For tofu, sauté in a pan until golden brown on all sides. Set aside.

    Rinse Black Beans

    Open the can of black beans and rinse under cold water to remove excess sodium. Set aside.

Assembling the Burritos

    Layer Ingredients

    On a large burrito tortilla, add 1/2 cup of cooked rice, 1/4 cup of black beans, and 1/4 cup of your chosen protein.

    Add Vegetables and Toppings

    Top with 1/4 cup of diced tomatoes, 1/4 cup of chopped lettuce, and a sprinkle of shredded cheese. Add salsa, sour cream, and slices of avocado as desired.

    Season to Taste

    Sprinkle cumin, chili powder, salt, and black pepper over the fillings to taste.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose all the ingredients. Ensure the burrito is tightly wrapped.

Serving

    Serve Hot

    Cut the burrito in half if desired and serve immediately with extra salsa and sour cream on the side.
