Preparation

    Prepare the Vegetables

    Peel and chop the potato and carrot into thin slices. Finely chop the spinach leaves, onion, and green chili.

    Make the Batter

    In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chili powder, cumin seeds, and salt. Gradually add water and whisk until you get a smooth, thick batter.

Frying

    Heat the Oil

    In a deep frying pan, heat oil over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Coat the Vegetables

    Add the chopped vegetables to the batter and mix until they are well coated.

    Fry the Pakoras

    Using a spoon, drop small portions of the batter-coated vegetables into the hot oil. Fry in batches to avoid overcrowding. Cook until golden brown and crispy, about 4-5 minutes.

Serving

    Drain and Serve

    Once fried, remove the pakoras from the oil and drain them on paper towels. Serve hot with tamarind and mint chutney.
