Method

Preparation

  1. 1

    Rinse the Rice

In a bowl, rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.

  2. 2

    Chop the Vegetables

Dice the carrot, potato, bell pepper, and tomato into small pieces. Trim the green beans and set aside.

  3. 3

    Prepare Aromatics

Mince the garlic and ginger, and chop the cilantro and mint leaves.

Cooking

  1. 4

    Heat Oil

In a large pot, heat the vegetable oil and ghee (if using) over medium heat.

  2. 5

    Sauté Aromatics

Add the minced garlic, ginger, and cumin seeds to the pot. Sauté for about 1-2 minutes until fragrant.

  3. 6

    Add Onions

Add the chopped onion to the pot and cook until translucent, about 5-7 minutes.

  4. 7

    Incorporate Vegetables

Stir in the diced carrot, potato, bell pepper, and green beans. Cook for 5 minutes, stirring occasionally.

  5. 8

    Add Tomatoes and Spices

Add the chopped tomato, coriander powder, turmeric powder, garam masala, salt, and black pepper. Cook for another 3-4 minutes.

  6. 9

    Add Rice and Water

Add the rinsed basmati rice and water to the pot. Stir gently to combine.

  7. 10

    Cook the Biryani

Bring the mixture to a boil, then reduce to low heat, cover, and simmer for 20-25 minutes until the rice is cooked and water is absorbed.

  8. 11

    Fluff and Garnish

Remove the pot from heat. Let it sit covered for an additional 5 minutes. Fluff the biryani with a fork and stir in the chopped cilantro and mint leaves.

  9. 12

    Serve

Serve hot with yogurt or salad on the side.
