Toast the Semolina
In a heavy-bottomed pan, heat the ghee over medium heat. Once hot, add the wheat semolina (sooji) and toast it until it turns golden brown, stirring continuously to prevent burning. This process should take about 5-7 minutes.

Prepare the Nuts
In a small pan, dry roast the cashews and almonds over low heat until they become slightly golden. Add the raisins towards the end to plump them up. Remove from heat and set aside.
Cooking the Halwa

Combine Ingredients
After the semolina is toasted, gradually pour in the water and milk while stirring continuously. This will help to avoid lumps in the halwa.

Add Sweetness
Once the mixture begins to thicken, add the sugar and stir well until it dissolves completely.

Flavor with Spices
Sprinkle in the cardamom powder and mix well to incorporate the flavor.

Incorporate Nuts and Dried Fruits
Add the roasted cashews, almonds, and raisins to the halwa. Stir to combine, allowing the halwa to cook for another 2-3 minutes until it reaches a pudding-like consistency.
Serving

Transfer the Sooji Halwa to a serving bowl. You can garnish it with additional nuts and serve it warm.
