    Toast Semolina

    In a heavy-bottomed pan, heat 1 cup of ghee over medium heat. Once the ghee is hot, add 1 cup of wheat semolina. Stir continuously to toast the semolina until it turns golden brown and emits a nutty aroma, about 10-15 minutes.

    Prepare Nuts and Dried Fruits

    In a separate small pan, dry roast 0.25 cup of cashew nuts and 0.25 cup of almonds until they are golden brown. Add 0.25 cup of raisins towards the end just to plump them up. Remove from heat and set aside.

Cooking

    Combine Ingredients

    Once the semolina is toasted, slowly add 2 cups of milk to the pan while stirring continuously to prevent lumps. Then add 1 cup of sugar, 0.5 tsp of cardamom powder, and a pinch of saffron strands. Mix well.

    Simmer the Mixture

    Reduce the heat to low and allow the mixture to cook for about 10-15 minutes, stirring occasionally until the milk is absorbed and the halwa thickens to your desired consistency.

    Add Nuts and Serve

    Once the halwa has thickened, add the roasted nuts and dried fruits to the mixture. Mix well and cook for another 2-3 minutes. Remove from heat and let it cool slightly before serving.
