    Marinate the Prawns

    In a bowl, combine the cleaned and deveined prawns with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Mix well and let it marinate for at least 30 minutes.

    Prepare the Rice

    Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Fry the Onions

    In a large pot, heat cooking oil over medium heat. Add the thinly sliced onions and fry until they are golden brown. Remove half for garnishing later.

    Add Spices

    To the remaining onions in the pot, add bay leaves, cloves, cardamom, and cinnamon stick. Sauté for a minute until fragrant.

    Cook Tomatoes and Prawns

    Add the chopped tomatoes to the pot and cook until they become soft. Then, add the marinated prawns. Cook until the prawns turn pink and are cooked through.

    Layer the Biryani

    In the same pot, layer the soaked and drained rice over the prawn mixture. Sprinkle the chopped cilantro and mint leaves on top. Add water (4 cups) and bring to a boil.

    Simmer

    Once it reaches a boil, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for about 20 minutes or until the rice is fully cooked and has absorbed the water.

Serving

    Serve the Biryani

    Gently fluff the biryani with a fork, and serve hot, garnished with the fried onions. Enjoy with raita or salad.
