Method

Preparation of Vegetables

  1. 1

    Chop the Vegetables

Wash the cucumber and carrot thoroughly. Peel the carrot, if desired. Cut the cucumber and carrot into small, bite-sized pieces or julienne them.

  2. 2

    Prepare the Mint

Rinse the mint leaves under cool water, pat dry with a paper towel, and chop roughly.

Making the Chutney

  1. 3

    Combine Ingredients

In a medium bowl, combine the chopped cucumber, carrot, and mint leaves.

  2. 4

    Add Spices

Sprinkle the salt, sugar, cumin powder, black pepper, and turmeric powder over the vegetables. Mix well to ensure the spices are evenly distributed.

  3. 5

    Prepare the Liquid Mixture

In a small saucepan, combine the vinegar and water. Heat over medium heat until just simmering, then remove from heat.

  4. 6

    Combine Everything

Pour the simmering vinegar mixture over the vegetable and spice mixture. Stir gently to combine, ensuring all pieces are coated.

  5. 7

    Let it Chill

Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 1 hour to allow the flavors to meld.
