Prepare the Papaya
Peel, seed, and dice the papaya into small cubes. Set aside.

Prepare the Chicken
Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until fully cooked. Remove from skillet and set aside.

Make the Sauce
Add cumin, coriander, turmeric, and saffron to the skillet. Stir to combine and cook for an additional 1 minute. Pour in the coconut milk and bring to a simmer.

Add Papaya
Once the sauce is simmering, add the diced papaya and stir gently to combine. Let it cook for about 5 minutes until the papaya is tender.

Combine Chicken and Sauce
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Cook for another 3-4 minutes to heat through.

Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side.
