    Prep the Spinach

    Thoroughly wash the fresh spinach in cold water to remove any dirt. Drain and set aside.

    Chop the Vegetables

    Finely chop the onion, tomato, garlic, ginger, and green chili.

Cooking

    Sauté the Onions

    In a large pan, heat the butter and vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the chopped onions and sauté until they turn golden brown.

    Add Garlic, Ginger, and Green Chili

    Add the chopped garlic, ginger, and green chili to the pan. Cook for another 2-3 minutes until fragrant.

    Cook the Tomatoes

    Add the chopped tomatoes to the pan and cook until they soften and blend well with the other ingredients, about 5 minutes.

    Add Spinach and Spices

    Add the washed spinach to the pan along with turmeric powder, red chili powder, and salt. Stir well and cook until the spinach wilts down, about 5 minutes.

    Blend the Mixture

    Remove the pan from heat and let the mixture cool slightly. Use a blender to puree the spinach mixture until smooth.

    Return to the Pan

    Pour the pureed spinach back into the pan. Add the cream and garam masala. Stir well and simmer for an additional 5 minutes on low heat.
