    Prepare the Batter

    In a mixing bowl, combine chickpea flour, cumin seeds, turmeric powder, red chili powder, and salt. Gradually add water while whisking to form a smooth, thick batter.

    Add Vegetables

    Once the batter is ready, add the sliced potatoes, onions, chopped spinach, and green chilies to the batter. Mix well until the vegetables are evenly coated.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter into it; if it sizzles and rises to the top, the oil is ready.

    Fry the Pakoras

    Using a tablespoon or your hands, drop spoonfuls of the vegetable batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes on each side.

    Drain and Serve

    Once cooked, remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with chutney or ketchup.
