Method

Preparation

  1. 1

    Slice the Onions

Peel and thinly slice the onions. Place them in a large mixing bowl.

  2. 2

    Prepare the Spice Mix

Add cumin seeds, turmeric powder, red chili powder, garam masala, and salt to the sliced onions. Mix well to combine.

  3. 3

    Make the Batter

Add chickpea flour and rice flour to the onion mixture. Gradually add water, mixing until a thick batter forms that coats the onions.

Frying

  1. 4

    Heat the Oil

In a deep pan, heat the oil over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

  2. 5

    Fry the Bhajis

Using your hands or a spoon, drop small portions of the batter-coated onions into the hot oil. Fry in batches to avoid overcrowding. Cook until golden brown, about 4-5 minutes, turning occasionally.

  3. 6

    Drain and Serve

Once golden brown, remove the bhajis from the oil and place them on paper towels to drain excess oil. Garnish with fresh coriander leaves before serving.
