Dough Preparation

    Mix the Ingredients

    In a mixing bowl, combine whole wheat flour and salt. Add the oil and mix well. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine the mashed potatoes, boiled green peas, steamed cauliflower, and grated homemade cheese (paneer). Add chopped cilantro, green chili, garam masala, cumin powder, and salt. Mix well until all ingredients are evenly incorporated.

Paratha Making

    Roll the Dough

    Divide the rested dough into equal-sized balls. Roll each ball into a small disc about 4 inches in diameter.

    Fill the Dough

    Place a portion of the filling in the center of each disc. Fold the edges over the filling to enclose it completely, forming a ball again.

    Roll the Paratha

    Gently flatten the filled ball and roll it out into a larger disc, about 7-8 inches in diameter, taking care not to let the filling spill out.

    Cook the Paratha

    Heat a skillet over medium heat. Place the rolled paratha on the skillet and cook for 1-2 minutes on each side, or until golden brown. Brush with oil as needed while cooking.

    Serve

    Remove the paratha from the skillet and serve hot with yogurt or chutney.
