    Prepare the Mangoes

    Peel and chop the ripe mangoes into small pieces, making sure to remove the pit. You should have about 3 cups of chopped mango.

    Chop the Vegetables

    Finely chop the onion and green chili. Grate the fresh ginger and mince the garlic.

Cooking

    Combine Ingredients

    In a large saucepan, combine the chopped mangoes, finely chopped onion, brown sugar, apple cider vinegar, grated ginger, minced garlic, and chopped green chili.

    Stir in the cumin seeds, turmeric powder, and salt to the mixture.
