Peel and chop the ripe mangoes into small pieces, making sure to remove the pit. You should have about 3 cups of chopped mango.

In a large saucepan, combine the chopped mangoes, finely chopped onion, brown sugar, apple cider vinegar, grated ginger, minced garlic, and chopped green chili.
