Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine cream cheese, saffron strands (soaked in 1 tbs warm water), cardamom powder, ginger-garlic paste, lemon juice, salt, and black pepper powder. Whisk until smooth and well combined.

  2. 2

    Marinate the Chicken

Add the boneless chicken cubes to the marinade. Mix well to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Cooking

  1. 3

    Prepare for Grilling

Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  2. 4

    Skewer the Chicken

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

  3. 5

    Grill the Chicken

Brush the grill with olive oil to prevent sticking. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

  4. 6

    Serve

Remove the chicken tikka from the skewers and serve hot with mint chutney and lemon wedges.
