Method

Kofta Preparation

    Prepare the Kofta Mixture

    In a large mixing bowl, combine the grated paneer, mashed potato, boiled green peas, cornflour, garam masala, cumin powder, and salt. Mix well until all ingredients are combined.

    Shape the Koftas

    Take a small portion of the mixture and shape it into small round balls (about 1 inch in diameter). Repeat for the remaining mixture.

    Fry the Koftas

    Heat oil in a frying pan over medium heat. Once hot, carefully add the koftas in batches, frying them until they are golden brown on all sides. Remove and drain on paper towels.

Gravy Preparation

    Prepare the Gravy Base

    In a separate pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.

    Sauté Onion and Ginger-Garlic

    Add the finely chopped onion and sauté until golden brown. Then, add ginger-garlic paste and cook for another 1-2 minutes until fragrant.

    Add Tomato Puree

    Stir in the pureed tomatoes and cook until the oil starts to separate from the mixture.

    Season the Gravy

    Add garam masala, salt, and cook for a few more minutes, stirring occasionally.

    Add Cream

    Reduce the heat to low, and stir in the heavy cream until well combined. Simmer for 5 minutes.

Assembly

    Combine Koftas with Gravy

    Gently add the fried koftas to the creamy tomato gravy and let them simmer for an additional 5 minutes.

    Garnish and Serve

    Garnish with chopped coriander leaves and serve hot with naan or rice.
