Method

Preparation

  1. 1

    Marinate the Lamb

In a bowl, add cubed lamb, salt, turmeric powder, and half of the garam masala. Mix well and let it marinate for at least 30 minutes.

Cooking

  1. 2

    Sauté the Onions

Heat cooking oil in a large pot over medium heat. Once hot, add the finely chopped onions and sauté until they turn golden brown.

  2. 3

    Add Garlic and Ginger

Stir in the minced garlic and ginger. Cook for another 2-3 minutes until fragrant.

  3. 4

    Cook the Lamb

Add the marinated lamb to the pot. Sauté for about 5-7 minutes until the lamb is browned on all sides.

  4. 5

    Add Spices

Sprinkle in the cumin powder, coriander powder, red chili powder, and the remaining garam masala. Mix well to coat the lamb.

  5. 6

    Add Tomatoes

Pour in the pureed tomatoes and stir. Cook for 10 minutes, allowing the mixture to thicken.

  6. 7

    Simmer with Water

Add water and bring to a boil. Reduce heat to low, cover, and let it simmer for 1.5 to 2 hours or until the lamb is tender.

  7. 8

    Final Touch

Add slit green chilies during the last 10 minutes of cooking. Adjust the seasoning with salt if needed.
