    Prep the Ingredients

    Wash and chop the spinach, finely chop the onion, and chop the tomato. Mince the garlic, grate the ginger, and slit the green chili.

    Heat the Oil

    In a large skillet or pot, heat the oil over medium heat. Once hot, add the cumin seeds and let them sizzle for a few seconds until aromatic.

    Sauté Onions

    Add the chopped onions to the skillet and sauté until they turn golden brown, about 5-7 minutes.

    Add Garlic, Ginger, and Spices

    Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes. Then add the turmeric powder, coriander powder, and salt. Mix well.

    Brown the Meat

    Add the cubed lamb or beef to the skillet, stirring to coat the meat in the spice mixture. Brown the meat on all sides, which should take about 5-10 minutes.

    Incorporate Tomato

    Add the chopped tomato and mix it in. Cook for another 3-4 minutes until the tomato softens.

    Add Water and Spinach

    Pour in the water and bring to a simmer. Once simmering, add the chopped spinach, stirring until it wilts down.

    Simmer

    Cover the skillet and let the dish simmer on low heat for 20-25 minutes, or until the meat is tender and cooked through.

    Finish with Garam Masala

    Once the meat is cooked, sprinkle the garam masala and black pepper powder over the dish. Stir well and cook for an additional 5 minutes.

    Remove from heat, serve hot with rice or naan, and enjoy your Lamb or Beef Saag!
