Preparation

    Prepare the Meat

    In a large bowl, combine the lamb or beef cubes with yogurt and half of the spice mix (cumin, coriander powder, garam masala, red chili powder, turmeric, and fennel seeds). Mix well and marinate for at least 1 hour, preferably overnight.

    Prepare the Aromatics

    Finely slice the onions, mince the garlic, and grate the ginger. Chop the tomatoes and set aside.

Cooking

    Cook the Onions

    Heat oil or ghee in a large pot over medium heat. Add sliced onions and sauté until golden brown, stirring occasionally, about 10-15 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for an additional 2-3 minutes until fragrant.

    Incorporate the Meat

    Add the marinated meat to the pot. Brown the meat on all sides, stirring frequently for about 10 minutes.

    Add Tomatoes and Remaining Spices

    Stir in the chopped tomatoes and the remaining spices. Cook for another 5-7 minutes until the tomatoes have softened.

    Simmer

    Pour in the water or broth, bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the meat is tender.

Finishing Touches

    Garnish

    Once the meat is tender, taste and adjust seasoning if necessary. Garnish with fresh cilantro and sliced almonds, if desired.

    Serve hot with steamed rice or naan.
