Preparation

    Prepare the Meat

    Cut the boneless lamb or beef into bite-sized pieces and set aside.

    Prepare the Vegetables

    Finely chop the onions, mince the garlic, and grate the ginger. Puree the tomatoes in a blender.

Cooking

    Sauté the Onions

    In a large pot or Dutch oven, heat some oil over medium heat. Add the chopped onions and sauté until they turn golden brown.

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the pot, cooking for another 2 minutes until fragrant.

    Incorporate Spices

    Stir in ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Cook for 1-2 minutes to toast the spices.

    Add Meat

    Add the meat pieces to the pot and brown them on all sides.

    Add Tomatoes and Water

    Pour in the pureed tomatoes and water. Stir well and bring to a simmer.

    Simmer the Curry

    Cover the pot and let it simmer for about 30 minutes, or until the meat is tender.

    Add Coconut Milk and Green Chilies

    Stir in the coconut milk and add the slit green chilies. Cook for an additional 10 minutes.

    Finish with Garam Masala

    Sprinkle garam masala over the curry and stir well. Cook for another 5 minutes.

Serving

    Garnish and Serve

    Remove from heat, garnish with chopped cilantro, and serve hot with rice or naan.
