    Marinate the Meat

    In a large bowl, combine the cubed lamb or beef with yogurt, turmeric powder, biryani masala, minced garlic, and grated ginger. Mix well, cover, and let it marinate for at least 1 hour (or overnight in the refrigerator for best flavor).

    Soak the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in enough water for at least 30 minutes, then drain.

    Cook the Meat

    In a large, heavy-bottomed pot, heat ghee or oil over medium heat. Add the sliced onions and sauté until golden brown. Add the marinated meat along with the cinnamon stick, cloves, cardamom pods, and cumin seeds. Cook until the meat is browned and cooked through, about 10-15 minutes.

    Add Spices

    Stir in the slit green chilies and cook for another 2 minutes. Adjust salt to taste.

    Cook the Rice

    In a separate pot, bring 5 cups of water to a boil. Add the soaked and drained basmati rice to the boiling water along with a pinch of salt. Cook until the rice is about 70% cooked, then drain the excess water.

    Layer and Cook the Biryani

    Layer the partially cooked rice over the meat in the pot. Sprinkle the chopped cilantro and mint over the rice. Cover the pot tightly and cook on low heat (dum) for about 25-30 minutes, allowing the flavors to meld and the rice to finish cooking.

    Serve the Biryani

    Once cooked, gently fluff the biryani with a fork. Serve hot with raita or a side salad.
