    Prepare the Ingredients

    Finely chop the onion, garlic, ginger, tomatoes, and bell pepper. Rinse the chickpeas if using canned.

Cooking

    Cook the Meat

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for 2 minutes until fragrant.

    Add the Meat

    Add the lamb or beef chunks to the pot. Cook until browned on all sides, about 5-7 minutes.

    Add Spices

    Stir in cumin seeds, coriander powder, turmeric powder, garam masala, chili powder, and salt. Cook for another 2 minutes to toast the spices.

    Add Tomatoes and Bell Pepper

    Add the chopped tomatoes and bell pepper. Stir and cook for 3-4 minutes until the tomatoes start to break down.

    Add Chickpeas and Water

    Add the chickpeas and water to the pot. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes, or until the meat is tender.

    Taste and adjust seasoning if necessary. Serve hot with rice or naan.
