Method

Preparation

  1. 1

    Wash the Rice

Thoroughly wash the basmati rice under cold running water until the water runs clear. This helps to remove excess starch.

  2. 2

    Soak the Rice

Soak the washed basmati rice in water for about 30 minutes. This aids in the cooking process.

Cooking

  1. 3

    Cook Milk and Cardamom

In a large pot, bring the whole milk to a boil. Add the cardamom pods and reduce the heat to low, allowing it to simmer.

  2. 4

    Add Rice

After the milk has simmered for about 10 minutes, add the soaked basmati rice (drained) to the pot. Stir well.

  3. 5

    Simmer the Mixture

Let the mixture simmer on low heat for 20-25 minutes, stirring occasionally to prevent the rice from sticking to the bottom.

  4. 6

    Add Sugar and Saffron

Once the rice is fully cooked and the kheer has thickened, add the sugar and saffron. Stir until the sugar is dissolved.

Serving

  1. 7

    Garnish and Serve

Remove the pot from heat. Let it cool slightly, then serve in bowls. Garnish with chopped almonds, pistachios, and raisins.
