Indo Chinese Chicken/egg Fried Rice Recipe
Basmati rice that has been stir-fried in a wok with vegetables, and choice of eggs, chicken or both. Add green chillies for additional spice! (not served with basmati rice).

Cooking the Rice

Rinse and Cook the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover and let it simmer for about 15 minutes or until the rice is fluffy and all the water is absorbed. Once cooked, fluff it with a fork and set aside.
Preparing the Stir-fry

Cook the Chicken
In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken breast, season with salt and black pepper, and stir-fry until the chicken is fully cooked and golden brown, about 5-7 minutes. Remove the chicken from the wok and set aside.

Scramble the Eggs
In the same wok, add another tablespoon of vegetable oil. Crack the eggs directly into the wok and scramble them until they are fully cooked. Remove and set aside with the chicken.

Mixing Everything Together

Combine Ingredients
Add the cooked basmati rice into the wok with the sautéed vegetables. Pour in the soy sauce and oyster sauce, then add the cooked chicken and scrambled eggs. Toss everything together until well mixed and heated through, about 2-3 minutes. Adjust seasoning with additional salt and black pepper if needed.

Serve
Remove the fried rice from heat and serve hot. Enjoy your Indo Chinese Chicken/Egg Fried Rice!
