Preparation

    Prepare Carrots

    Wash and peel the carrots. Grate the carrots using a grater or food processor until you have 500 grams of shredded carrots.

    Chop Nuts

    Chop the cashews and almonds into small pieces. You can leave some whole for garnish if desired.

Cooking

    Cook Carrots in Milk

    In a heavy-bottomed pan, add the grated carrots and milk. Cook on medium heat, stirring occasionally until the milk reduces and thickens. This should take about 20-25 minutes.

    Add Sugar

    Once the milk has thickened, add the sugar to the mixture. Stir well and continue to cook for another 10-15 minutes until the sugar dissolves and the mixture becomes a halwa consistency.

    Incorporate Ghee and Nuts

    Add the ghee to the mixture and stir well. Then add the chopped cashews, almonds, raisins, and cardamom powder. Mix everything well and cook for an additional 5 minutes.

Serving

    Serve Gajar Halwa

    Remove the pan from heat. Let it cool slightly, then serve warm in bowls. You can garnish with whole cashews and almonds on top if desired.
