Preparation

    Prep the Chicken

    Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

    Chop Vegetables

    Finely chop the onion, garlic, and ginger.

    Prepare Fruits

    Chop the pineapple and mango into small chunks. Halve the grapes and dice the red bell pepper.

Cooking

    Cook the Chicken

    In a large pan, heat the olive oil over medium heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 7-10 minutes. Remove chicken from the pan and set aside.

    Sauté Aromatics

    In the same pan, add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent, about 3-4 minutes.

    Add Spices

    Stir in the curry powder and cook for another minute until fragrant.

    Make the Sauce

    Pour in the chicken broth and bring to a simmer. Reduce the heat and stir in the heavy cream, cooking until the sauce thickens slightly.

    Combine Everything

    Add the cooked chicken and all the prepared fruits (pineapple, mango, red bell pepper, and grapes) to the sauce. Stir to combine and heat through for about 5 minutes.
