For the Chicken Pakora

Prepare the Chicken
Cut the chicken breast into bite-sized cubes and set aside.

Make the Batter
In a mixing bowl, combine gram flour, rice flour, red chili powder, turmeric powder, garam masala, and salt.

Add Water
Gradually add water to the flour mixture, stirring until you achieve a smooth batter consistency.

Coat the Chicken
Add the chicken cubes to the batter and mix well to ensure they are fully coated.

Heat the Oil
In a deep frying pan, heat oil over medium heat until hot.

Fry the Pakoras
Using a spoon or your hands, drop the batter-coated chicken cubes into the hot oil. Fry in batches until golden brown and cooked through, about 5-7 minutes.

Drain
Remove the fried chicken pakoras and place them on paper towels to drain excess oil.
For the Chutneys

Prepare Tamarind Chutney
In a small bowl, mix tamarind paste and brown sugar. Stir until well combined and set aside.

Make Mint Chutney
In a blender, combine mint leaves, coriander leaves, lemon juice, green chili, and salt. Blend until smooth, adding a little water if necessary.
