Marinate Chicken

    Prepare the Marinade

    In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Mix well.

    Marinate the Chicken

    Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook Biryani Rice

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.

    Boil the Rice

    In a large pot, bring 6 cups of water to a boil. Add bay leaves, cloves, cardamom pods, cinnamon stick, and salt to taste.

    Cook the Rice

    Add the soaked rice to the boiling water. Cook until the rice is about 70% done, then drain and set aside.

Prepare Biryani

    Fry the Onions

    In a large, heavy-bottomed pot, heat oil or ghee over medium heat. Add the sliced onions and fry until golden brown. Remove half of the onions and set aside for garnishing.

    Cook the Marinated Chicken

    Add the marinated chicken to the pot with the remaining fried onions. Cook until the chicken is fully cooked and the oil begins to separate from the mixture.

    Layer the Biryani

    Reduce the heat to low. Spread half of the cooked rice over the chicken, then sprinkle half of the fresh coriander and mint. Add the remaining rice on top and finish with the rest of the herbs.

    Saffron Milk Topping

    In a small bowl, soak saffron strands in warm milk. Drizzle the saffron milk over the top layer of rice.

    Final Cooking

    Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes to allow the flavors to meld.

    Garnish and Serve

    Garnish with the reserved fried onions before serving. Fluff the biryani with a fork and serve hot with raita or salad on the side.
