Preparation

    Prepare the Chickpeas

    If using dried chickpeas, soak them overnight and cook them until tender. If using canned chickpeas, rinse and drain them.

    Chop the Vegetables

    Wash and chop the spinach into smaller pieces. Grate the ginger and mince the garlic.

Cooking

    Heat the Oil

    In a large skillet or pan, heat the cooking oil over medium heat.

    Sauté Aromatics

    Add the cumin seeds to the hot oil and allow them to sizzle for about 30 seconds. Then add the grated ginger and minced garlic, stirring until fragrant (about 1-2 minutes).

    Add Spices

    Stir in the turmeric powder, coriander powder, red chili powder, and salt. Cook for another minute to toast the spices.

    Add Chickpeas and Water

    Add the cooked chickpeas and water to the skillet, stirring to combine everything. Let it simmer for about 5 minutes.

    Add Spinach

    Add the chopped spinach to the pan, stirring well to mix with the chickpeas and spices. Cover the pan and let it cook for another 5 minutes or until the spinach is wilted.

    Finish with Garam Masala

    Sprinkle the garam masala over the dish, stir well, and cook for an additional 2 minutes. Adjust salt to taste.
