Preparation

    Prepare the Chickpeas

    If using dried chickpeas, soak them overnight in water. Drain and rinse. Cook in boiling water until tender, about 1-1.5 hours. If using canned chickpeas, rinse and drain them.

    Chop the Vegetables

    Finely chop the onion, garlic, ginger, and tomatoes.

Cooking

    Heat Oil

    In a large pan over medium heat, add the vegetable oil and let it heat up.

    Sauté Cumin Seeds

    Add cumin seeds to the hot oil and sauté for about 30 seconds until they become fragrant.

    Cook Onions

    Add the chopped onions and cook until they are translucent and golden brown, about 5-7 minutes.

    Add Garlic and Ginger

    Stir in the chopped garlic and ginger, cooking for another 2 minutes until fragrant.

    Add Tomatoes and Spices

    Add the chopped tomatoes, coriander powder, turmeric, red chili powder, and salt. Cook for about 5 minutes until the tomatoes break down and the mixture thickens.

    Combine Chickpeas

    Stir in the cooked or canned chickpeas and mix well with the spice mixture.

    Add Water

    Pour in the water, stir, and bring the mixture to a simmer. Cook for 10-15 minutes on low heat to allow the flavors to meld.

    Finish with Garam Masala

    Stir in the garam masala and cook for an additional 2 minutes.

    Garnish

    Remove from heat, garnish with fresh cilantro, and serve hot.
