Preparing the Rice

    Rinse and Soak

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Cook the Rice

    In a large pot, bring 4 cups of water to a boil. Add the drained basmati rice and a pinch of salt. Cook until the rice is about 70% done (it should still have a slight bite to it), then drain and set aside.

Cooking the Biryani

    Heat the Oil

    In a large skillet or pot, heat 3 tablespoons of cooking oil or ghee over medium heat.

    Add Spices

    Add cumin seeds and sauté for a minute until they start to splutter. Then add the mixed vegetables and stir-fry for about 3-4 minutes.

    Add Rice and Seasoning

    Add the partially cooked rice to the skillet. Sprinkle in the garam masala, turmeric powder, salt, and black pepper. Gently fold everything together, making sure the rice is well coated with the spices.

    Finish Cooking

    Cover the pot and let it simmer on low heat for about 10-15 minutes, allowing the flavors to meld and the rice to finish cooking. Stir occasionally to prevent sticking.

    Garnish

    Once cooked, remove from heat and fluff the biryani with a fork. Top with fried onions and chopped cilantro before serving.

Making the Raita

    Prepare the Raita

    In a bowl, combine the yogurt, grated cucumber, salt, cumin powder, and chopped mint. Mix well and refrigerate until ready to serve.
