Prepare the Okra
Wash the okra thoroughly under running water and pat them dry with a kitchen towel. Cut off the tops and tails of the okra and slice them into 1-inch pieces.

Chop the Vegetables
Peel and finely chop the onion. Wash and chop the tomatoes into small pieces.
Cooking

Heat Oil
In a large skillet or pan, heat 2 tablespoons of cooking oil over medium heat.

Sauté Onions
Add the chopped onions to the hot oil and sauté until they become translucent and slightly golden, about 5-7 minutes.

Add Tomatoes and Spices
Stir in the chopped tomatoes and cook for another 5 minutes until they soften. Then, add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Cook the Okra
Add the prepared okra to the skillet and stir gently to coat the okra with the spices. Cook for about 10-12 minutes, stirring occasionally until the okra is tender but not mushy.

Finish with Garam Masala
Once the okra is cooked, sprinkle garam masala over the dish and mix gently. Cook for an additional 2 minutes.

Garnish and Serve
Remove from heat, garnish with fresh cilantro, and serve hot with roti or rice.
