Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Mix well until all dry ingredients are evenly distributed.

Add Wet Ingredients
Add the yogurt to the dry ingredients and mix well. Gradually add water, a little at a time, while kneading the dough until it becomes soft and elastic.

Knead the Dough
Knead the dough for about 5-7 minutes until it is smooth. Cover it with a damp cloth or plastic wrap and let it rest for at least 2 hours. This allows the dough to relax and become easier to roll out.
Frying the Bhatura

Prepare for Frying
After resting, divide the dough into small balls (about the size of a golf ball). Keep them covered with a damp cloth to prevent drying out.

Heat Oil
In a deep frying pan or kadhai, heat oil over medium heat. You can test if the oil is ready by dropping a small piece of dough into it; if it bubbles and rises to the surface, the oil is hot enough.

Roll Out the Dough
Take one dough ball and flatten it slightly. Use a rolling pin to roll it out into a circle approximately 6-7 inches in diameter. Make sure it's not too thin, or it won't puff up.

Fry the Bhatura
Carefully slide the rolled-out dough into the hot oil. It should puff up immediately. Fry until golden brown on both sides, about 1-2 minutes. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the bhaturas hot with chickpea curry (chole) or yogurt and pickles.
