Preparing Aloo Tikki

    Mixing Ingredients

    In a large mixing bowl, combine the boiled and mashed potatoes, boiled green peas, grated ginger, minced garlic, cumin powder, coriander powder, chopped green chilies, salt, and chopped coriander leaves. Mix well until all ingredients are evenly combined.

    Forming Patties

    Divide the mixture into equal portions and shape each portion into a round patty approximately 1/2 inch thick.

    Frying Patties

    Heat oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan. Fry until golden brown on both sides, about 4-5 minutes per side. Remove and drain on paper towels.

Preparing Chutneys

    Making Tamarind Chutney

    In a saucepan, combine tamarind pulp, sugar, and salt. Heat gently until the sugar dissolves and the mixture thickens slightly. Set aside to cool.

    Making Mint Chutney

    In a blender, combine fresh mint leaves and lemon juice. Blend until smooth, adding a little water if necessary to achieve the desired consistency. Adjust seasoning if needed.
