    Chop the Vegetables

    Peel and chop the potatoes into small cubes. Finely chop the onion, and chop the tomatoes. Mince the garlic and grate the ginger.

    Prepare the Spinach

    Wash the spinach thoroughly under running water to remove any dirt. Blanch it in boiling water for 2 minutes, then drain and chop it coarsely.

Cooking

    Sauté the Base

    In a large pan, heat the vegetable oil or ghee over medium heat. Add cumin seeds and allow them to splutter. Then, add the chopped onions and sauté until golden brown.

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the pan, stirring for about 1 minute until fragrant.

    Cook the Tomatoes and Spices

    Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil starts to separate from the mixture.

    Add Potatoes

    Add the chopped potatoes to the pan and mix well. Cover and cook for about 10 minutes, stirring occasionally, until the potatoes are tender.

    Incorporate Spinach and Cream

    Once the potatoes are cooked, add the chopped spinach and cinnamon powder. Stir well to combine. After 2-3 minutes, pour in the light cream and garam masala, mixing thoroughly.

    Final Simmer

    Let the mixture simmer for another 5 minutes on low heat to allow the flavors to meld together. Adjust seasoning if necessary.
