Dough

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour and salt.

  3. 3

    Combine Ingredients

Add the activated yeast mixture, yogurt, and oil to the dry ingredients. Mix until a dough begins to form.

  4. 4

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    Let the Dough Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Filling Preparation

  1. 6

    Prepare Filling

In a pan, heat a little oil and sauté the chopped onion until translucent. Add the green chili and sauté for another minute.

  2. 7

    Mix Filling Ingredients

In a bowl, combine the sautéed onion, boiled mashed potatoes, cilantro, cumin powder, coriander powder, garam masala, and salt. Mix well until evenly combined.

Assembling and Cooking

  1. 8

    Divide Dough

Once the dough has risen, punch it down and divide it into equal-sized balls (about 8-10).

  2. 9

    Stuff the Naan

Take one dough ball, flatten it slightly, and place a spoonful of the potato filling in the center. Gather the edges of the dough to enclose the filling and pinch to seal.

  3. 10

    Roll Out Naan

Gently flatten the stuffed dough ball and roll it out into an oval shape, about ¼ inch thick.

  4. 11

    Cook Naan

Heat a skillet or tandoor over medium-high heat. Place the rolled naan on the skillet and cook until bubbles form on the surface, then flip and cook until golden brown. Optionally, brush with melted butter or ghee.

  5. 12

    Serve

Remove from heat and serve hot with your favorite curry or chutney.
