    Prepare the Potatoes

    Peel the potatoes and cut them into small cubes. Rinse under cold water and set aside.

    Sauté the Onions

    In a large pan, heat the oil over medium heat. Add cumin seeds and let them crackle for a few seconds. Then add the finely chopped onion and sauté until golden brown.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.

    Cook the Tomatoes

    Add the chopped tomato and cook until it softens, about 5 minutes.

    Spice it Up

    Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.

    Add Potatoes and Peas

    Add the cubed potatoes and fresh green peas to the pan. Stir to coat with the spices.

    Simmer

    Pour in enough water to cover the potatoes and peas. Bring to a boil, then reduce the heat, cover, and let it simmer for about 15-20 minutes, or until the potatoes are tender.

    Finish with Garam Masala

    Once the potatoes are cooked, sprinkle garam masala and mix. Cook for an additional 2 minutes.

    Garnish and Serve

    Remove from heat, garnish with fresh cilantro, and serve hot with rice or bread.
