    Make the Tart Crust

    In a mixing bowl, combine flour, sugar, and salt. Add softened butter and mix until crumbly. Stir in egg yolk and ice cold water until a dough forms. Chill for 30 minutes.

    Pre-bake the Crusts

    Preheat oven to 375°F (190°C). Roll out dough and cut into small circles to fit tartlet pans. Press into pans and poke holes in the bottom with a fork. Bake for 15-20 minutes or until golden. Let cool.

    Make the Pastry Cream

    In a saucepan, heat milk and half the sugar until just boiling. In another bowl, whisk egg yolks, cornstarch, and remaining sugar. Slowly add hot milk to the egg mixture, whisking constantly. Return to heat and stir until thickened. Add vanilla and butter. Cool completely.

    Assemble the Tartlets

    Fill each cooled tartlet shell with pastry cream. Arrange fresh berries on top.

    Prepare the Glaze

    In a small saucepan, combine apricot jam and water. Heat until melted, then strain. Brush over the fruit.
