Prepare the Ingredients

Chop the pancetta into small pieces. Grate the Parmesan cheese and set aside. Beat the eggs in a bowl and mix with grated Parmesan and black pepper.

Cook the Pasta

In a large pot, boil salted water and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.

Cook the Pancetta

In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.

Combine Pasta and Sauce

Add the hot spaghetti to the skillet with pancetta. Remove from heat, and quickly mix in the egg and cheese mixture, adding reserved pasta water a little at a time until the sauce reaches desired creaminess.

Serve

Serve immediately with extra grated Parmesan and black pepper on top.
