    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch wide. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Dry the Potatoes

    After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Working in batches, carefully add the dried potato strips to the hot oil. Fry for 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt and pepper to taste.

    Serve

    Serve the crispy fries hot with ketchup on the side.
