Make the Dough
In a large bowl, whisk together flour, sugar, cocoa powder, and salt. Make a well in the center and add the egg, melted butter, and wine. Mix until a dough forms.

Knead and Roll
Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Shape the Shells
Divide the dough into small pieces and roll out each piece thinly. Cut into circles and wrap around metal cannoli forms, sealing the edges with water.

Fry the Shells
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the cannoli shells until golden brown. Remove and drain on paper towels.

Fill the Shells
Once the shells are completely cool, remove them from the forms. Fill each shell with the prepared ricotta filling using a pastry bag.
